What do you do with your peels?

Do you cook with the peels of vegetables? 


Or does the idea sound absurd to you? 


If you find it absurd you are not alone. 


I was exactly like you


Until one day I visited a friend and her mom insisted I stay for lunch. 


Lunch was something called Khoshar Chorchori which in Bengali means a dish made of mixed peels from various vegetables. 


Wow!! 


Of course I was hesitant to begin with, but once I started eating the dish, I just couldn't stop. 


Aunty told me that she had spent a good part of her life in the Sunderbans Delta, where there was little land and frequent flooding.
That meant that vegetables were precious. 
And that is why nothing was ever thrown away. 


The taste and the story stayed with me and then I started reading up on the advisibility of eating peels. 


I found out that eating peels are a great way to build immunity because they are the outer most layer of the fruit/vegetable, and rich in phytochemicals and other protective substances that keep the fruit safe. 


And so we now try to eat almost everything with the peel.
